Water Cress Grape Palm Heart Salad

This water cress, grape, palm heart salad even won my husband over. It was easy and quick to make. If you’re looking for a salad that’s not traditional lettuce and tomato, maybe you’ll like this one.

If you haven’t used water cress before, here are a few facts about this amazing relative to the mustard plant. It is just slightly bitter with a little peppery taste. You’ll find is in the produce section of your market probably in a plastic bag. The nutritional value is outstanding, containing significant amounts of vitamins A, C, K, calcium, iron, magnesium, and potassium. Packed full of nutrients and also low calorie.

Besides the great nutritional value of water cress, I love that I just have to rinse it, shake it dry, and it’s ready for the salad. No tearing lettuce leaves or chopping.

Water cress has a short shelf life, so I recommend buying it within 2-3 days from when you need to use it making sure it does not have yellowed leaves or is wilted. You can store it in your refrigerator in a perforated plastic bag in the crisper/veggie drawer.

Hearts of palm are tender buds from certain palm trees. They have a very mild, yet unique flavor that can be used in many dishes. Plus, 1/2 cup is only 25 calories, zero fat content, no cholesterol, and an excellent source of potassium.

It’s November at the time of this writing and grapes are in season right now.  Take advantage of this nutritious fruit and add them to salads for little taste of sweet.  Or, better yet, try my Grape Salad Recipe.  It’s almost all grapes and so yummy!

Water Cress Grape Palm Heart Salad | Recipe

1 bag (4 oz.) water cress
1 can hearts of palm
1 cup seedless grapes
1 cup sliced mushrooms
4 oz. feta cheese
2-3 T. white balsamic vinegar
3-4 T. olive oil
salt & pepper to taste (like to use fresh ground black pepper)

Rinse water cress in colander and shake dry.  You may want to pat it with paper towels to avoid too much water in your salad.  Put water cress in a large bowl.

I bought whole hearts of palm so I had to slice them into bite size pieces, but you can also buy them already sliced.  Put sliced hearts of palm on top of water cress.

Slice, or buy already sliced, mushrooms and add to bowl with water cress.

Wash and dry grapes and add to other ingredients.

Add olive oil, balsamic vinegar, and salt & pepper to bowl and toss.

Put this water cress grape palm heart salad into individual salad bowls and top with feta cheese and fresh ground black pepper (optional)

Makes 4 large salads.
